I’m Daniela Ruby Varela, founder of Ruby’s Bagels. I’m a first-generation Mexican American. Born in El Paso, Texas and raised in Milwaukee. My love for food started young, shaped by the women in my family. I grew up watching my mom and tias cook and learned how ingredients tell stories.
My first memory of bagels? My mom coming home from her shifts at Patrick Cudahy with onion bagels and a tub of plain cream cheese from the grocery store.
Years later, in 2017, I had a bagel on a road trip in Cleveland that blew me away. It took a year of experimenting, but I finally created a bagel that I really loved. It was surely a science experiment, but I did it.
What started as a passion project became Ruby’s Bagels. I started to sell bagels at throughout the city in my little wooden crates, shortly moved into a rented food truck at Zócalo Food Park, years later we were able to purchase our own and now we are a full shop and growing team. RB isn’t just about good bagels but it’s also about family, community, and creating opportunities.
The Team
Ruby’s Bagels wouldn’t be what it is without our team. Simple as that. We are a group of hardworking, passionate, and kind people who show up every day ready to roll (literally). From the bagel bakers/back of house staff to the sweet faces in front of the house, we are a big family!
We’re proud to be powered by women, by first-generation hustle, and by a deep love for good food and good people. All of whom have helped shape Ruby’s into what it is today.!
We might not be the biggest shop, but we put big love into everything we do. We’re not just coworkers, we’re a community too!

The Bagels
At RB, we do things the old-school way because that’s the best way. Every bagel is hand-rolled, boiled, and baked fresh each morning. No shortcuts, no soft bread disguised as a bagel just the real deal with that perfect chew and golden crust we love!
We’re not fast food. Our bagels take time, and we think you can taste the difference. That’s why we keep our menu intentionally simple. Early in the morning, no one wants to scan through a mile long list of options. You just want something delicious, done right, and made with care and that’s exactly what we’re here for.
Our focus is quality over quantity. Just know you’re getting something we really work hard on and take pride in.
